Rich Hot Cocoa

Forget the instant packets. Real hot cocoa made from cacao powder tastes completely different, richer, more complex, and deeply satisfying. Coconut sugar gives it a caramel-like sweetness, and a touch of cinnamon adds the kind of warmth that makes you want to curl up on the couch.

Ingredients

  • 2 tbsp cacao powder
  • 2 tbsp coconut sugar crystals
  • 2 cups milk of choice
  • 1/4 tsp Ceylon cinnamon
  • Pinch of Redmond Real Salt
  • 1/2 tsp vanilla extract

Directions

  1. In a small saucepan, whisk together the cacao powder, coconut sugar, cinnamon, and salt.
  2. Add about 1/4 cup of the milk and whisk until a smooth paste forms.
  3. Gradually whisk in the remaining milk and heat over medium, stirring frequently, until hot and steaming.
  4. Remove from heat, stir in the vanilla extract, and pour into mugs.

Notes

  • For an extra-rich version, use full-fat coconut milk or add a tablespoon of coconut cream powder.
  • Top with a sprinkle of cacao nibs for added crunch and chocolate flavor.
  • Swap cacao powder for cocoa powder for a milder, smoother chocolate taste.
