Forget the instant packets. Real hot cocoa made from cacao powder tastes completely different, richer, more complex, and deeply satisfying. Coconut sugar gives it a caramel-like sweetness, and a touch of cinnamon adds the kind of warmth that makes you want to curl up on the couch.
Ingredients
- 2 tbsp cacao powder
- 2 tbsp coconut sugar crystals
- 2 cups milk of choice
- 1/4 tsp Ceylon cinnamon
- Pinch of Redmond Real Salt
- 1/2 tsp vanilla extract

Directions
- In a small saucepan, whisk together the cacao powder, coconut sugar, cinnamon, and salt.
- Add about 1/4 cup of the milk and whisk until a smooth paste forms.
- Gradually whisk in the remaining milk and heat over medium, stirring frequently, until hot and steaming.
- Remove from heat, stir in the vanilla extract, and pour into mugs.
Notes
- For an extra-rich version, use full-fat coconut milk or add a tablespoon of coconut cream powder.
- Top with a sprinkle of cacao nibs for added crunch and chocolate flavor.
- Swap cacao powder for cocoa powder for a milder, smoother chocolate taste.
