Rosemary Herb Butter Potatoes

These golden potatoes develop a perfect crispy exterior while staying fluffy inside. The herb butter melts into every crevice, creating an irresistible side dish that pairs with any main course.

Ingredients

  • 2 lbs small potatoes, halved
  • 3 tbsp extra virgin olive oil
  • 1 tsp Redmond Real Salt
  • 1/2 tsp black pepper
  • 4 tbsp butter, softened
  • 2 tbsp fresh rosemary, chopped
  • 3 garlic cloves, minced
  • 1 tsp garlic powder
  • 1/2 tsp thyme

Directions

  1. Preheat oven to 425°F. Line a large baking sheet with parchment paper.
  2. Toss halved potatoes with olive oil, salt, and pepper. Arrange cut-side down on baking sheet.
  3. Roast 25-30 minutes until golden brown and crispy on the bottom.
  4. Meanwhile, mix softened butter with chopped rosemary, minced garlic, garlic powder, and thyme.
  5. Remove potatoes from oven and immediately dot with herb butter.
  6. Return to oven for 5 minutes to melt butter, then serve hot.

Notes

  • Try herbs de provence instead of individual herbs for French flavor
  • Add paprika for smoky color and taste
  • Use avocado oil for higher heat cooking
  • Sprinkle with nutritional yeast flakes for cheesy flavor
