Ingredients
- 2 lbs small potatoes, halved
- 3 tbsp extra virgin olive oil
- 1 tsp Redmond Real Salt
- 1/2 tsp black pepper
- 4 tbsp butter, softened
- 2 tbsp fresh rosemary, chopped
- 3 garlic cloves, minced
- 1 tsp garlic powder
- 1/2 tsp thyme

Directions
- Preheat oven to 425°F. Line a large baking sheet with parchment paper.
- Toss halved potatoes with olive oil, salt, and pepper. Arrange cut-side down on baking sheet.
- Roast 25-30 minutes until golden brown and crispy on the bottom.
- Meanwhile, mix softened butter with chopped rosemary, minced garlic, garlic powder, and thyme.
- Remove potatoes from oven and immediately dot with herb butter.
- Return to oven for 5 minutes to melt butter, then serve hot.
Notes
- Try herbs de provence instead of individual herbs for French flavor
- Add paprika for smoky color and taste
