Rosemary Roasted Sweet Potatoes

Simple roasted sweet potatoes become something special with the addition of woodsy rosemary and quality sea salt. This versatile side dish complements both casual and elegant meals.

Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Rosemary
  • 1 teaspoon Flaky Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Garlic Powder

Directions

  1. Preheat oven to 425F and line a large baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato cubes with olive oil until evenly coated.
  3. Add rosemary, flaky sea salt, black pepper, and garlic powder. Toss until potatoes are well seasoned.
  4. Spread potatoes in a single layer on prepared baking sheet, ensuring they don't overlap.
  5. Roast for 25-35 minutes, flipping once halfway through, until golden brown and tender with crispy edges.

Notes

  • Try Thyme or Sage instead of rosemary for different herb profiles.
  • For extra flavor, finish with a sprinkle of Himalayan Pink Crystal Salt.
  • Cut potatoes uniformly for even cooking.
  • Don't overcrowd the pan or potatoes will steam instead of roast.
