Rotisserie-Style Herb Chicken

Everyone loves a rotisserie chicken, and this recipe gives you that same golden, savory, impossibly juicy result right from your own oven. A pre-made herb rub does most of the work, and the technique is as easy as it gets. Make this once and you will have it memorized forever.

Ingredients

  • 1 whole chicken (4 to 5 lbs)
  • 2 tbsp rotisserie herb rub
  • 2 tbsp extra virgin olive oil
  • 1 tsp Redmond Real Salt
  • ½ tsp black pepper
  • 1 lemon, quartered
  • 1 head garlic, halved

Directions

  1. Preheat oven to 425°F. Pat the chicken dry and let it sit at room temperature for 20 minutes.
  2. Mix the rotisserie herb rub with the olive oil, salt, and pepper into a paste. Rub all over the chicken and under the breast skin.
  3. Stuff the cavity with the lemon quarters and garlic halves.
  4. Place breast-side up in a roasting pan or cast iron skillet.
  5. Roast for 1 hour to 1 hour 15 minutes until the internal temperature of the thigh reaches 165°F and the skin is deeply golden.
  6. Rest for 15 minutes before carving.

Notes

  • The Rotisserie Herb Rub already contains salt. Taste before adding extra and adjust to your preference.
  • Truss the legs together with kitchen string for a more even roast.
  • The rotisserie herb rub does all the seasoning work. It is a one-step flavor solution.
  • Save the carcass for homemade broth.
