These protein-packed fritters transform humble chickpeas into crispy, flavorful patties perfect for dinner or lunch. Mediterranean herbs and warming spices create complex flavors while the chickpeas provide satisfying substance.
Ingredients
- 2 cups garbanzo beans, cooked and drained
- 1/4 cup extra virgin olive oil, divided
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons italian seasoning
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1 teaspoon Redmond Real Salt
- 1/4 teaspoon cayenne
- 2 tablespoons arrowroot powder
- 1/4 cup water, as needed

Directions
- To cook dried garbanzo beans: soak overnight, then simmer 1-2 hours until very tender. Drain well.
- Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté onion until softened, about 5 minutes.
- Add garlic and cook 1 minute more until fragrant.
- In a food processor, pulse cooked chickpeas until coarsely chopped but not pureed.
- Transfer to a bowl and mix in sautéed onion mixture, Italian seasoning, cumin, paprika, salt, and cayenne.
- Stir in arrowroot powder. Add water gradually if mixture seems too dry to hold together.
- Form mixture into 8-10 patties using your hands.
- Heat remaining olive oil in a large skillet over medium heat.
- Cook fritters 4-5 minutes per side until golden brown and crispy.
- Serve immediately while hot.
Notes
- Try greek seasoning instead of Italian herbs for a different Mediterranean flavor.
- Serve with yogurt sauce or lemon wedges.
- Add chopped parsley or cilantro for fresh herb flavor.
