Savory Chickpea Fritters

These protein-packed fritters transform humble chickpeas into crispy, flavorful patties perfect for dinner or lunch. Mediterranean herbs and warming spices create complex flavors while the chickpeas provide satisfying substance.

Ingredients

  • 2 cups garbanzo beans, cooked and drained
  • 1/4 cup extra virgin olive oil, divided
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons italian seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 teaspoon Redmond Real Salt
  • 1/4 teaspoon cayenne
  • 2 tablespoons arrowroot powder
  • 1/4 cup water, as needed

Directions

  1. To cook dried garbanzo beans: soak overnight, then simmer 1-2 hours until very tender. Drain well.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté onion until softened, about 5 minutes.
  3. Add garlic and cook 1 minute more until fragrant.
  4. In a food processor, pulse cooked chickpeas until coarsely chopped but not pureed.
  5. Transfer to a bowl and mix in sautéed onion mixture, Italian seasoning, cumin, paprika, salt, and cayenne.
  6. Stir in arrowroot powder. Add water gradually if mixture seems too dry to hold together.
  7. Form mixture into 8-10 patties using your hands.
  8. Heat remaining olive oil in a large skillet over medium heat.
  9. Cook fritters 4-5 minutes per side until golden brown and crispy.
  10. Serve immediately while hot.

Notes

  • Try greek seasoning instead of Italian herbs for a different Mediterranean flavor.
  • Serve with yogurt sauce or lemon wedges.
  • Add chopped parsley or cilantro for fresh herb flavor.
