Savory Herb Breakfast Quinoa Bowl

This savory breakfast bowl breaks away from traditional sweet morning meals. Nutty quinoa provides complete protein while fresh herbs and vegetables add color and nutrition.

Ingredients

  • 1/2 cup white quinoa
  • 1 cup vegetable broth
  • 1 tbsp extra virgin olive oil
  • 1/2 red bell pepper, diced
  • 2 green onions, sliced
  • 2 eggs
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh chives, chopped
  • 1 tbsp fresh dill, chopped
  • 1/2 tsp Redmond Real Salt
  • 1/4 tsp black pepper
  • 1 avocado, sliced
  • 2 tbsp nutritional yeast flakes

Directions

  1. Rinse quinoa and cook in vegetable broth 15-20 minutes until tender and liquid is absorbed.
  2. Heat olive oil in a small skillet. Saute bell pepper 3-4 minutes until softened.
  3. Fry or poach eggs to your preferred doneness (runny yolks work beautifully here).
  4. Fluff quinoa with fork and stir in sauteed peppers, green onions, parsley, chives, and dill.
  5. Season with salt and pepper, then divide between two bowls.
  6. Top each bowl with sliced avocado, cooked egg, and nutritional yeast flakes.

Notes

  • Try everything blend seasoning instead of nutritional yeast for different flavor
  • Add garlic powder to the quinoa while cooking
  • Use tricolor quinoa for visual appeal
  • Substitute sunflower seeds for extra protein and healthy fats
