Savory Oat Bowl with Fried Egg

Most people only eat oatmeal sweet, but savory oatmeal is a total game changer. Creamy oats topped with a perfectly fried egg, wilted greens, and a good drizzle of olive oil is hearty, satisfying, and completely different from what you are used to. Once you try it, you will add it to regular rotation.

Ingredients

  • 1 cup rolled oats
  • 2 cups water or broth
  • 2 large eggs
  • 2 cups fresh spinach or kale
  • 2 tbsp extra virgin olive oil
  • ½ tsp garlic granules
  • ½ tsp Redmond Real Salt
  • ¼ tsp black pepper
  • Pinch of chili peppers

Directions

  1. Bring the water or broth to a boil. Stir in the oats and salt. Reduce heat and cook for 5 minutes until creamy.
  2. While the oats cook, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the spinach and garlic granules. Cook for 1 to 2 minutes until wilted.
  3. Push the greens to the side. Add the remaining oil and fry the eggs to your liking.
  4. Spoon the oats into bowls. Top with the sauteed greens and fried egg. Season with pepper, chili flakes, and a drizzle of olive oil.

Notes

  • Using broth instead of water adds more savory depth to the oats.
  • Top with a sprinkle of nutritional yeast flakes for a cheesy, umami finish.
  • Add sliced avocado and a few cherry tomatoes for a more complete bowl.
