Most people only eat oatmeal sweet, but savory oatmeal is a total game changer. Creamy oats topped with a perfectly fried egg, wilted greens, and a good drizzle of olive oil is hearty, satisfying, and completely different from what you are used to. Once you try it, you will add it to regular rotation.
Ingredients
- 1 cup rolled oats
- 2 cups water or broth
- 2 large eggs
- 2 cups fresh spinach or kale
- 2 tbsp extra virgin olive oil
- ½ tsp garlic granules
- ½ tsp Redmond Real Salt
- ¼ tsp black pepper
- Pinch of chili peppers

Directions
- Bring the water or broth to a boil. Stir in the oats and salt. Reduce heat and cook for 5 minutes until creamy.
- While the oats cook, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the spinach and garlic granules. Cook for 1 to 2 minutes until wilted.
- Push the greens to the side. Add the remaining oil and fry the eggs to your liking.
- Spoon the oats into bowls. Top with the sauteed greens and fried egg. Season with pepper, chili flakes, and a drizzle of olive oil.
Notes
- Using broth instead of water adds more savory depth to the oats.
- Top with a sprinkle of nutritional yeast flakes for a cheesy, umami finish.
- Add sliced avocado and a few cherry tomatoes for a more complete bowl.
