The trick to a good kale salad is massaging the leaves. It sounds odd but a quick massage with the dressing tenderizes the kale and makes it much more pleasant to eat. This Asian-inspired version has a punchy sesame ginger dressing and plenty of crunch. It is one of those salads where you actually want to eat the whole bowl.
Ingredients
- 1 large bunch kale, stems removed, leaves chopped
- ¼ cup sliced blanched almonds
- 1 large carrot, shredded
- 2 green onions, sliced
- 1 tbsp white hulled sesame seeds
- For the dressing: 2 tbsp soy sauce, 1 tbsp apple cider vinegar, 1 tbsp Duck River honey, 1 tsp ginger, 1 tbsp sesame oil, 1 tbsp extra virgin olive oil

Directions
- Whisk together all the dressing ingredients.
- Place the chopped kale in a large bowl. Pour the dressing over the kale and massage with your hands for 2 to 3 minutes until the leaves soften and darken in color.
- Add the shredded carrot and green onions. Toss to combine.
- Top with sliced almonds and sesame seeds.
Notes
- Massaging the kale for at least 2 minutes is essential. It breaks down the tough fibers and makes the salad much more enjoyable.
- This salad holds up well and is even better the next day, making it great for meal prep.
- Add edamame or cashew pieces for extra protein.
