This cucumber salad is the definition of refreshing. Thinly sliced cucumbers tossed with fresh dill and a tangy vinegar dressing. It comes together in about 5 minutes and pairs with almost anything, especially grilled meats and rich dishes that need something cool and bright on the side.
Ingredients
- 3 large cucumbers, sliced thin
- 2 tbsp fresh dill (or 1 tsp dried)
- 2 tbsp extra virgin olive oil
- 2 tbsp white wine vinegar
- ½ tsp Redmond Real Salt
- ¼ tsp black pepper
- Pinch of cane sugar

Directions
- Slice the cucumbers as thin as possible, using a mandoline if you have one.
- In a bowl, whisk together the olive oil, vinegar, dill, salt, pepper, and sugar.
- Toss the cucumbers in the dressing.
- Refrigerate for at least 15 minutes before serving.
Notes
- The longer this sits, the more flavorful it gets. Make it an hour ahead if you can.
- Add thinly sliced red onion for extra bite.
- Try apple cider vinegar in place of white wine vinegar for a slightly different tang.
