Smoky Paprika Beef and Vegetable Skewers

These vibrant skewers bring together the deep, smoky flavor of paprika with tender beef and fresh vegetables for a complete meal on the grill. The spice blend creates a beautiful crust while keeping the meat juicy and flavorful.

Ingredients

  • 2 pounds beef sirloin or tenderloin, cut into 2-inch cubes
  • 2 tablespoons smoked paprika powder
  • 1 tablespoon garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • 1 teaspoon Redmond Real Salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons extra virgin olive oil
  • 2 bell peppers, cut into 2-inch pieces
  • 1 large onion, cut into wedges
  • 2 zucchini, sliced into thick rounds

Directions

  1. Combine smoked paprika powder, garlic powder, onion powder, cumin, salt, and black pepper in a large bowl.
  2. Add beef cubes and extra virgin olive oil, tossing to coat evenly with spice mixture.
  3. Let beef marinate at room temperature for 20 minutes while preparing vegetables.
  4. Thread beef alternately with bell peppers, onion wedges, and zucchini rounds onto metal skewers.
  5. Preheat grill to medium-high heat.
  6. Grill skewers for 12-15 minutes, turning every 3-4 minutes, until beef reaches desired doneness and vegetables are tender.
  7. Let rest for 5 minutes before serving.
