Smoky Paprika Beef and Vegetable Stew

This hearty stew showcases the deep, smoky flavor of Spanish paprika paired with tender beef and seasonal vegetables. Perfect for cold evenings when you want something substantial and comforting.

Ingredients

  • 2 pounds Ground Beef
  • 2 tablespoons Smoked Paprika Powder
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1/3 cup Vegetable Soup Blend
  • 4 cups beef broth
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Redmond Real Salt
  • 1/2 teaspoon Black Pepper
  • 2 bay leaves

Directions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Brown the ground beef, breaking it into chunks, about 8-10 minutes.
  2. Add onion, garlic, smoked paprika, salt, and pepper. Cook until onion softens, about 5 minutes.
  3. Pour in broth and add bay leaves. Bring to a boil, then reduce heat to low.
  4. Add vegetable soup blend and simmer covered for 1.5-2 hours until vegetables are tender and flavors meld.
  5. Remove bay leaves before serving.

Notes

  • Substitute Wagyu Ground Beef for an upgraded version.
  • Add Cumin for extra warmth.
  • Serve over Brown Basmati Rice or with crusty bread.
  • Stew tastes even better the next day.
