This comforting stew transforms simple pantry staples into a rich, satisfying meal. The combination of creamy white beans and aromatic vegetables creates the perfect cold-weather comfort food.
Ingredients
- 1 1/2 cups Great Northern Beans, soaked overnight
- 1/3 cup Vegetable Soup Blend
- 4 cups water
- 2 tablespoons Extra Virgin Olive Oil
- 1 teaspoon Smoked Paprika Powder
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Redmond Real Salt
- 1/4 teaspoon Black Pepper
- 2 tablespoons Nutritional Yeast Flakes
- 1 tablespoon TN Maple Syrup

Directions
- Drain and rinse the soaked beans. In a large pot, combine beans with 6 cups fresh water and bring to a boil.
- Reduce heat and simmer beans for 45-60 minutes until tender. Drain, reserving 2 cups of the cooking liquid.
- In the same pot, heat olive oil over medium heat. Add vegetable soup blend with 4 cups water and simmer for 15 minutes until vegetables are tender.
- Add cooked beans, reserved cooking liquid, smoked paprika, garlic powder, salt, and black pepper. Simmer for 10 minutes.
- Stir in nutritional yeast flakes and maple syrup. Taste and adjust seasoning as needed.
Notes
- Substitute other white beans for variety.
- Add Thyme or Rosemary for extra herb flavor.
- For smokier flavor, increase Smoked Paprika Powder to taste.
- Stew thickens as it cools and can be thinned with water or broth when reheating.
