Spiced Apple Cider Oat Bread

This aromatic quick bread captures the essence of autumn with apple cider, warming spices, and the wholesome texture of rolled oats. The combination creates a tender, moist loaf that's perfect for breakfast or an afternoon treat.

Ingredients

  • 2 cups unbleached all purpose flour
  • 1 cup rolled oats
  • 3/4 cup coconut sugar crystals
  • 2 teaspoons baking powder
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon Redmond Real Salt
  • 1 cup apple cider
  • 1/3 cup Duck River honey
  • 1/4 cup avocado oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F. Grease a 9x5 inch loaf pan.
  2. In a large bowl, whisk together flour, oats, coconut sugar, baking powder, apple pie spice, and salt.
  3. In a separate bowl, whisk apple cider, honey, avocado oil, eggs, and vanilla until well combined.
  4. Pour wet ingredients into dry ingredients and stir just until combined. Do not overmix.
  5. Pour batter into prepared loaf pan and smooth top.
  6. Bake 50-60 minutes until a toothpick inserted in center comes out clean.
  7. Cool in pan 10 minutes, then turn out onto wire rack to cool completely.

Notes

  • Substitute steel cut oats pulsed in food processor for a different texture.
  • Add 1/2 cup chopped walnuts or pecans for extra richness.
  • Try cinnamon and nutmeg blend instead of apple pie spice if preferred.
