Ingredients
- 2 cups unbleached all purpose flour
- 1 cup rolled oats
- 3/4 cup coconut sugar crystals
- 2 teaspoons baking powder
- 1 teaspoon apple pie spice
- 1/2 teaspoon Redmond Real Salt
- 1 cup apple cider
- 1/3 cup Duck River honey
- 1/4 cup avocado oil
- 2 large eggs
- 1 teaspoon vanilla extract

Directions
- Preheat oven to 350°F. Grease a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, oats, coconut sugar, baking powder, apple pie spice, and salt.
- In a separate bowl, whisk apple cider, honey, avocado oil, eggs, and vanilla until well combined.
- Pour wet ingredients into dry ingredients and stir just until combined. Do not overmix.
- Pour batter into prepared loaf pan and smooth top.
- Bake 50-60 minutes until a toothpick inserted in center comes out clean.
- Cool in pan 10 minutes, then turn out onto wire rack to cool completely.
Notes
- Substitute steel cut oats pulsed in food processor for a different texture.
- Add 1/2 cup chopped walnuts or pecans for extra richness.
- Try cinnamon and nutmeg blend instead of apple pie spice if preferred.
