Spiced Beef and Lentil Stew

This protein-packed stew combines tender beef with nutritious lentils and a blend of warming spices for a satisfying one-pot meal. The long, slow simmer develops deep flavors that make this stew perfect for cold evenings or meal prep.

Ingredients

  • 1 pound Ground Beef
  • 1 cup French Green Lentils
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, diced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika Powder
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Redmond Real Salt
  • 1/2 teaspoon Black Pepper

Directions

  1. Heat olive oil in a large pot over medium-high heat. Brown ground beef, breaking it up as it cooks, about 5-6 minutes until no longer pink.
  2. Add onion, carrots, and celery. Cook 5 minutes until vegetables start to soften.
  3. Stir in cumin, paprika, turmeric, salt, and pepper. Cook 1 minute until fragrant.
  4. Add lentils, beef broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer covered for 45-60 minutes until lentils are tender.
  5. Adjust seasoning to taste and serve hot with crusty bread.

Notes

  • Try Red Lentils for a quicker-cooking option, reducing simmer time to 25-30 minutes.
  • Add Bay Leaves during simmering for extra depth of flavor.
  • Use Garam Masala seasoning in place of individual spices for an Indian-inspired variation.
