- 1 pound Ground Beef
- 1 cup French Green Lentils
- 1 large onion, diced
- 3 carrots, sliced
- 3 celery stalks, diced

Directions
- Heat olive oil in a large pot over medium-high heat. Brown ground beef, breaking it up as it cooks, about 5-6 minutes until no longer pink.
- Add onion, carrots, and celery. Cook 5 minutes until vegetables start to soften.
- Stir in cumin, paprika, turmeric, salt, and pepper. Cook 1 minute until fragrant.
- Add lentils, beef broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer covered for 45-60 minutes until lentils are tender.
- Adjust seasoning to taste and serve hot with crusty bread.
