This vibrant orange hummus gets its sweetness from roasted carrots and warm flavor from cumin and coriander. It's a nutritious twist on traditional hummus that's perfect for dipping or spreading.
Ingredients
- 1 cup Garbanzo Beans (Chick Peas), cooked
- 4 large carrots, peeled and chopped
- 3 tbsp Extra Virgin Olive Oil, divided
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp Cumin
- 1/2 tsp Coriander
- 1/2 tsp Redmond Real Salt
- 1/4 tsp Paprika
- 2 tbsp water, if needed

Directions
- Soak garbanzo beans overnight, then simmer for 1 hour until tender. Drain and cool.
- Toss chopped carrots with 1 tablespoon olive oil and roast at 400°F for 20-25 minutes until tender and lightly caramelized.
- In a food processor, combine cooked chickpeas, roasted carrots, garlic, lemon juice, cumin, coriander, salt, and remaining olive oil.
- Process until smooth and creamy, adding water as needed to reach desired consistency.
- Taste and adjust seasonings. Garnish with paprika before serving.
Notes
- Use Coriander Seeds and grind them fresh for the best flavor.
- Try adding a pinch of Cinnamon for extra warmth.
- Serve with vegetables, pita, or use as a spread in wraps and sandwiches.
