Spiced Carrot Hummus

This vibrant orange hummus gets its sweetness from roasted carrots and warm flavor from cumin and coriander. It's a nutritious twist on traditional hummus that's perfect for dipping or spreading.

Ingredients

  • 1 cup Garbanzo Beans (Chick Peas), cooked
  • 4 large carrots, peeled and chopped
  • 3 tbsp Extra Virgin Olive Oil, divided
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Redmond Real Salt
  • 1/4 tsp Paprika
  • 2 tbsp water, if needed

Directions

  1. Soak garbanzo beans overnight, then simmer for 1 hour until tender. Drain and cool.
  2. Toss chopped carrots with 1 tablespoon olive oil and roast at 400°F for 20-25 minutes until tender and lightly caramelized.
  3. In a food processor, combine cooked chickpeas, roasted carrots, garlic, lemon juice, cumin, coriander, salt, and remaining olive oil.
  4. Process until smooth and creamy, adding water as needed to reach desired consistency.
  5. Taste and adjust seasonings. Garnish with paprika before serving.

Notes

  • Use Coriander Seeds and grind them fresh for the best flavor.
  • Try adding a pinch of Cinnamon for extra warmth.
  • Serve with vegetables, pita, or use as a spread in wraps and sandwiches.
  • Store covered in refrigerator for up to one week.
