These aromatic lamb meatballs bring warm Middle Eastern flavors to your dinner table. The coconut rice provides a creamy, slightly sweet base that perfectly complements the spiced meat.
Ingredients
- 1 lb ground lamb
- 1 tsp garam masala seasoning
- 1/2 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp Redmond Real Salt
- 1/4 tsp black pepper
- 2 tbsp extra virgin olive oil
- 1 cup white basmati rice
- 1 can (14oz) coconut milk
- 1 cup water
- 1/2 tsp Redmond Real Salt
- 2 tbsp fresh cilantro, chopped

Directions
- In a large bowl, combine ground lamb, garam masala, cumin, garlic powder, salt, and pepper. Mix gently and form into 16-18 meatballs.
- Heat olive oil in a large skillet over medium-high heat. Brown meatballs on all sides, about 8-10 minutes total. Remove and set aside.
- Meanwhile, rinse basmati rice until water runs clear. In a medium saucepan, combine rice, coconut milk, water, and salt.
- Bring to a boil, then reduce heat to low, cover, and simmer 18-20 minutes until rice is tender.
- Return meatballs to skillet, cover, and cook on low heat 5-7 minutes until cooked through.
- Serve meatballs over coconut rice, garnished with fresh cilantro.
Notes
- Substitute ground beef or turkey if lamb isn't available
- Try tandoori seasoning instead of garam masala for a different flavor profile
- Add a pinch of cinnamon to the rice for extra warmth
