Spiced Walnut Date Energy Bites

These naturally sweet energy bites provide sustained energy from whole food ingredients. The warming spices complement the rich walnuts and caramel-like dates for a satisfying treat that tastes like dessert but fuels your day.

Ingredients

  • 2 cups unpitted medjool dates, pitted
  • 1 1/2 cups walnuts (raw)
  • 1 teaspoon Ceylon cinnamon
  • 1/2 teaspoon cardamom (ground)
  • 1/4 teaspoon ginger
  • 1/4 teaspoon Redmond Real Salt
  • 2 tablespoons cacao powder
  • 1 tablespoon coconut sugar crystals for rolling

Directions

  1. Remove pits from unpitted medjool dates and soak in warm water for 5 minutes if very firm.
  2. Add walnuts to food processor and pulse until coarsely chopped.
  3. Add drained dates, Ceylon cinnamon, cardamom, ginger, salt, and cacao powder.
  4. Process until mixture forms a sticky paste that holds together when pressed.
  5. Roll mixture into 20 small balls using damp hands.
  6. Roll each ball in coconut sugar crystals if desired.
  7. Chill for 30 minutes to firm up before serving.

Notes

  • Store energy bites in refrigerator for up to 1 week or freeze for longer storage.
  • Substitute pecans or almonds for walnuts for different flavors.
  • Add vanilla extract for extra richness.
  • Roll in shredded coconut or chopped nuts instead of coconut sugar.
