These naturally sweet energy bites provide sustained energy from whole food ingredients. The warming spices complement the rich walnuts and caramel-like dates for a satisfying treat that tastes like dessert but fuels your day.
Ingredients
- 2 cups unpitted medjool dates, pitted
- 1 1/2 cups walnuts (raw)
- 1 teaspoon Ceylon cinnamon
- 1/2 teaspoon cardamom (ground)
- 1/4 teaspoon ginger
- 1/4 teaspoon Redmond Real Salt
- 2 tablespoons cacao powder
- 1 tablespoon coconut sugar crystals for rolling

Directions
- Remove pits from unpitted medjool dates and soak in warm water for 5 minutes if very firm.
- Add walnuts to food processor and pulse until coarsely chopped.
- Add drained dates, Ceylon cinnamon, cardamom, ginger, salt, and cacao powder.
- Process until mixture forms a sticky paste that holds together when pressed.
- Roll mixture into 20 small balls using damp hands.
- Roll each ball in coconut sugar crystals if desired.
- Chill for 30 minutes to firm up before serving.
Notes
- Store energy bites in refrigerator for up to 1 week or freeze for longer storage.
- Substitute pecans or almonds for walnuts for different flavors.
- Add vanilla extract for extra richness.
- Roll in shredded coconut or chopped nuts instead of coconut sugar.
