Ingredients
- 1 tbsp lemon balm leaf
- 1 tsp chamomile flowers
- 1 tsp passionflower
- 2 cups boiling water

Directions
- Place the lemon balm, chamomile, and passionflower in a tea infuser or teapot.
- Pour the boiling water over the herbs and cover immediately (lemon balm's aromatic oils are volatile and escape with steam).
- Steep for 8 to 10 minutes.
- Strain and sip slowly.
Notes
- Covering the tea while it steeps is especially important for lemon balm. The aromatic compounds that give it its flavor and calming properties evaporate quickly.
- This is a wonderful iced tea in the summer. Steep a double-strength batch and pour over ice.
- Add a few lavender flowers for an even more relaxing blend.
