Turmeric Golden Scramble

Turmeric gives these scrambled eggs a gorgeous golden color and a subtle earthy warmth. Paired with black pepper, which helps your body absorb the beneficial compounds in turmeric, and a handful of fresh spinach, this is a breakfast that is as good for you as it tastes.

Ingredients

  • 4 large eggs
  • 2 cups fresh spinach
  • 1 tbsp extra virgin olive oil
  • ½ tsp turmeric
  • ¼ tsp garlic granules
  • Pinch of black pepper
  • ¼ tsp Redmond Real Salt

Directions

  1. Whisk the eggs with the turmeric, garlic granules, salt, and pepper until well combined.
  2. Heat the olive oil in a skillet over medium heat. Add the spinach and cook for 1 to 2 minutes until wilted. Push to the side of the pan.
  3. Pour the egg mixture into the pan. Let it set for 30 seconds, then gently fold and stir until the eggs are just set but still soft.
  4. Serve immediately while everything is warm.

Notes

  • Add diced avocado on top for healthy fats and extra creaminess.
  • Try adding a pinch of cayenne if you like a little morning heat.
