White Bean and Herb Salad

White beans tossed with fresh herbs, lemon, and good olive oil make one of the simplest and most satisfying salads you can put together. It is one of those dishes where the quality of each ingredient really matters, especially the olive oil. It comes together in minutes and works as a side dish, a light lunch, or scooped onto toasted bread.

Ingredients

  • 3 cups cooked great northern beans (about 1½ cups dried, soaked and cooked)
  • ¼ cup extra virgin olive oil
  • Juice of 2 lemons
  • 2 tbsp fresh parsley flakes
  • 1 tbsp fresh basil, chopped
  • 2 cloves garlic, minced
  • ¼ tsp Redmond Real Salt
  • ¼ tsp black pepper

Directions

  1. Gently toss the beans with olive oil, lemon juice, parsley, basil, garlic, salt, and pepper.
  2. Let sit for 15 minutes at room temperature to let the flavors come together.
  3. Taste and adjust seasoning before serving.

Notes

  • Add diced tomatoes, cucumber, and red onion for a more substantial salad.
  • This is great on its own or spooned over thick toasted sourdough.
  • Keeps in the fridge for up to 3 days.
