Yerba mate delivers a smooth, focused energy that is different from coffee. It is less jittery and more sustained, which makes it a favorite for people who want a natural lift in the afternoon. Sweetened with a bit of honey and brightened with fresh lemon, this iced version is clean and refreshing.
Ingredients
- 2 tbsp yerba mate
- 2 cups hot water (not boiling, around 170 degrees)
- 1 tbsp Duck River honey
- Juice of half a lemon
- Ice

Directions
- Heat the water to about 170 degrees. If you do not have a thermometer, bring water to a boil and let it cool for 3 to 4 minutes.
- Steep the yerba mate in the hot water for 4 to 5 minutes.
- Strain out the leaves, then stir in the honey while the tea is still warm.
- Let cool slightly, add the lemon juice, then pour over a glass filled with ice.
Notes
- Yerba mate can become bitter if steeped in boiling water. Keeping the temperature slightly lower produces a smoother brew.
- For a fizzy version, replace the ice and cold water with sparkling water.
- Add a few fresh mint leaves for extra freshness.
